lager beer fermentation time line

    I came across two approach on what temperature to pitch lager yeast.
    One is pitch at the range of 60ْF - 65ْF, when fermentation start cool down to the desire temperature.

    The second way is to pitch straight in to the desire temperature. in my case Wyeast 2124, desire first step temperature is 49F.

    How lager fermentation start at your dungeon ?

    I like to pitch the yeast colder than my desired fermentation temp, allow it to free rise to the controlled temp I have it set at.

    Pitching it warm, and then cooling isn't advised. No sense in getting them worked up, and slowing down the process.

    I pitch my lagers at 70 degrees and then stick in my preferred temp range of 54 degrees till I conduct a D-rest.

    I pitch at a few degrees lower than my target fermentation temp. I think the pitch-high-then-cool-down idea originally came about because people (and yeast manufacturers) worried about slow starts. But if you pitch an adequate amount of healthy yeast, that shouldn't be an issue.

    Also, I don' have a dungeon, but that sounds pretty cool.
