Lager yeast in Cali Common

    Advice on la ager yeast to use in a Common? Besides the typical "California Common" strains; I'm interested in exploring a bit. I've used Danish Lager 2042 before and have been impressed with the fruitiness from it, it seems like if I fermented it 55-60 deg F it might make a nice common. Any thoughts or suggestions?

    okay, ill rephrase. lets say i make a common using traditional lager yeast. should my pitch rate be higher as in a lager or lower as in an ale? or - does it really just depend upon the character im going for, clean vs fruity?

    I've had good luck with Wyeast 2206 Bavarian lager fermented in the mid/low 60s for biere de garde. I'd pitch as if you were brewing a standard lager to keep it cleaner. Good luck!

    I have been told by a commercial brewer who brews a nice cali com, that Wyeast 2124 at 60 works well.

    I've wondered whether Fermentis Saflager S-23 might make a reasonable dry yeast choice for a Cal Common. It has a slightly higher than typical recommended temp rang for a lager, and it does produce a bit of fruit in my experience. I've only used it a couple times though, ~54-56 degrees. Despite the light but of uncharacteristic fruit, I liked the two beers I made with it.
