Lambic question - brewed without rice hulls (oops..)

    I never read any suggestion that you transfer a Lambic of off trub or dead yeast. Normally they provide nutrients.

    Racking will oxidize the beer. Instead of cardbard/sherry notes you'll get lemon type acidity.

    Autolysis of yeast is part of the lambic flavor profile, therefore, telling him to rack off the trub/yeast cake isn't a great idea. The beer will be much cleaner and lack the hay/barnyard funk of a lambic. Rack Flander's/Oud Bruins off trub, Lambics, no.

    i'd normally wholeheartedly agree with you....
    but that doesn't look like the egg drop soup-esque wort that i'd seen a lambic.
    there's trub and then there's trub.

    he has a ridiculous amount of trub plus he's racked to fruit immediately. the yeast will feed off the trub and, by 2018, his lambic may or may not be ready.

    i can't see his beer being complete if he lets it sit as it is. again, my 2 cents, whether right or wrong. but that beer's currently a bit of a mess. also wondering what its gravity is.
