Last year kbs

    So I just popped open one of my kbs bottles I stored in my cellar. The 2017 vintage and it was very thin and had a distinct liquorice taste. I'm new to aging beers so forgive me if I sound silly or inexperienced in this. I enjoyed it but it was very different than when I put them down there and I worry that it won't hold up to anymore time in my cellar. Should I just start drinking or will the flavor change and develop more over time?

    I would recommend drinking KBS fresh rather than aged as one of the flavors that fades very quickly is coffee.

    Since you already aged it I suggest aging for 2 more years. I have been told by many folks that 3 year KBS is better than one year. Also I agree KBS is best fresh however I also believe each year brews different batches. 2017 for sure was best fresh. However 2018 I felt age will improve it as my 2018 wasn't as bourbon forward and am hoping in 3 years the flavors will pop a bit more.
    But since you already aged it and didn't like after a year go another 2 years and see if it appeals to you more.

    Thank you that looks like just what I was looking for. Ill be sure to read it.

    I never said I didn't like the way it tasted, I'm drinking another one right now as I type. I was mostly concerned about how much it changed and how I didn't think it would hold up to anymore aging.

    I have two bottles left so I'll save them and probably just open one a year and see how that goes.
