Yes. That's it. Thanks for the link. Says it reduce hop bitterness, has anyone noticed this? Should I compensate in beersmith?

Some say that this is the Ballantine ale yeast. The Chico yeast, BRY-96 from Siebel Institute is said to be the Ballantine 'beer' strain.

Yeast gurus think BRY-97 is the Anchor/WLP-51/Wyeast 1272. Anchor got their ale yeast just after Ballantine closed and the yeast was banked.

Edit - I am going to rack my Ballantine IPA clone today, used BRY-97 for the first time on this batch. Should be interesting.

Oh - be prepared for a looonnnggg lag time. It was about 2 days. 1.5 packs/ 5 gallons rehydrated. This dry yeast is known for that.

With a 2 day lag time I can't see this yeast strain being popular with homebrewers.

    Cheers!

Will doing a starter eliminate the lag time?

Yes. This may be one dry yeast that is an exception to the rule.

I've used it twice and did not notice any excessive lag time, but that was only for about 15l of pale ale with a full, fresh, rehydrated pack. ie overpitching by about 20% or so. There's a homebrew shop here that sells this yeast repackaged in 15g packets as he got a lot of complaints about the lag time and that seems to work better

It's pretty boring as yeasts go, ie neutral. Was good in both those hoppy pale ales at least and yes it did floc much quicker than us05. You could try nottingham at a restrained temp, it's very fast and flocs even better and is fairly neutral. If you want to stick to a dried yeast to try
