Let's Talk About Event Horizon

    My thoughts precisely. When I taste honey, I equate that with sweetness. I believe it's unnecessary and is keeping a good beer from being a great beer in the case of Event Horizon.

    Unless the yeast doesn't eat all the sugar provided by the ingredients, right?

    Just had some on draft last week - this year's version is still plenty boozy when fresh, IMO. I typically let my bottles rest for at least a year before drinking them.

    Honey is a simple sugar and the first thing the yeast would go after. I'm not sure what yeast strain Olde Hickory uses, but based on other beers, we can assume it's capable of producing 10% ABV. In other words, the yeast isn't crapping out and leaving unfermented honey in Event Horizon.

    Huh? honey ferments out at 95%+ thus virtually no sugar sweetness is left behind. Any "sweetness" you taste is from the malt bill, not the honey.

    Sorry, agreed in the case of the honey - just sweetening ingredients, in general.

    I understand that. but my point is if you taste the honey you're tasting sweetness.
