Let's talk Drie Fonteinen Framboos here

    So yada yada, there's a new batch of Framboos on the way at this mega-awesome event in Copenhagen that I'm not going to be able to go to. However, I am curious - how is Framboos different from Hommage? Anyone knowledgeable care to share? The difference (in specifications and otherwise) between the Drie Fonteinen Oude and Schaerbeekse Krieks, as well as Cantillon's Lou Pepe and regular Kriek have been stated here and elsewhere in terms of provenance of the cherries (in both cases) and age of the lambic to which the cherry is added (in the case of the Lou Pepe). Is there any similar documented difference for the Hommage and Framboos? Or does Armand decide whether a particular batch of raspberry lambic is Framboos or Hommage after tasting it?

    My understanding is that Drie Fonteinen's Framboos was a pure raspberry lambic while Hommage contained a small quantity of cherries.

    lou pepe uses lambics all from the same year, thus needing the use of sugar syrup for bottle conditioning instead of young lambic. it is also aged in first-use wine barrels whereas the standard lambics are mostly put in barrels which have long ago lost most of their oak or wine flavors. the proportion of fruit added is also supposed to be more than the standard.

    I think the main difference is that Hommage contains 30% raspberries and 5% cherries, while Framboos contains only raspberries. There may be other differences in the blending, but that seems like the main one. (Apparently Rosé de Gambrinus used to also contain a small percentage of cherries to help with the coloring, but that's no longer the case.)

    The 2010 Framboos coming out is a "new batch, new bottling, [but the] same beer," and only seems to contain raspberries.

    I haven't had the (dubious?) pleasure of experiencing Hommage (I've heard some seriously funky stuff - and not all in a good way), but the '99 Framboos I got to partake of contained precisely zero off flavors.
