Funkwerks has cellar up to x months. Crooked stave makes Saisons and sours so cellar at will. River north makes Belgians so see my crooked stave comment. I don't buy beer from the others so have no clue. Eta- none of these guys have been around with the same brewer long enough to know how anything ages. Colorado makes beers for drinking not looking, it's what we do best. Drink up johnny.
