Long term refrigeration

    Hi all,

    I'm sure like others out there I am not alone in wishing I had a nice cool place to build up a nice cellar but do not have the means to do so. I live in an apartment which is really well insulated and at this point in time the refrigerator is the only place for my modest collection of beers.

    The bulk of beers I am storing are imperial stouts over 10% abv. My reasoning behind storing them is not entirely to down to exploring how these beers will taste with several years on them but also down to the fact that I think it's nice to keep some special beers for an occasion.

    While I know storing them in this way will slow down the aging process, I'm wondering if these conditions can be detrimental to a beer?

    It won't be detrimental to the beer, as long as you aren't freezing the beers. As you said, they will age more slowly.

    Also, beers with things like brett in them won't experience the same change at all, because it will be too cold for the brett to work.
