Looking for a "la fin du monde" extract clone

    Pilsner extract for fermentables with 10% table sugar added. I'd suggest an OG of 1.085
    Hallertau @ 60 to 19 IBUs

    Ferment with ideally WY 3864, but more likely WY3787/1214.

    Great beer. It's been a while since I've had one because they aren't distributed to my part of WI. Although I haven't brewed it, using the right yeast is probably really important. The 3864 yeast that kjyost sugggests is the WYeast platinum strain originally derived from the same source as Unibroue's yeast. I believe it was last manufactured for a June 2010 release, so you are not likely to find it now. I hope they re-released it sometime in the future that coincides with my brewing schedule, as I'd like to try it.

    Yep, haven't seen 3864 in a while, 3787 will be the closest substitute. Although I'm sure you could just collect dregs instead.

    I assumed they would pasteurize. Am I wrong? I do know they say they condition "on lees" but not sure if they are live or not :slight_smile:

    Amazing beer, and priced surprisingly cheep. I think I'll pick one up soon. It's been a while, too long. It really is one of the best tripels I've ever had, and simply amazing for any beer category.

    And if wyeast comes out with the signature strain 3864 again, I'll try to clone it.
