Looking for a sour recipe (partial mash)

    Anyone have a good partial mash sour recipe? I've got an epic collection of dregs from walez and I want to put it to use soon. Looking for something that'll come out pretty sessionable, I'm thinking I'll add about 5-10% rye as well as I love the character of Sour in the Rye. Thanks all!

    General lambics are around 30-50% unmalted wheat so you'd need to include that in your partial mash.

    3# Unmalted wheat, 1.5#pilsner in the mini-mash. Mash high.

    Use pilsner extract for the rest of the gravity.

    How do you avoid a stuck sparge with all that unmalted wheat?

    I added 2 handfuls of rice hulls to the overall mash and did a quasi-turbid mash. I have never (knock on wood) had a stuck sparge and don't add rice hulls to my wheat beers normally (even when 50% of grist) and only add a few handfuls to rye beers (like today's 20% of grist). I have only recently begun doing beta-glucen rests.
