    Probably no need to leave it out to air, as it can oxidize, and there is probably enough wild yeast on the fruit anyway. And with enough time, no need to filter, it will drop out after cold crashing.

    I have made a number of batches of hard cider. I have always used campden tablets to kill any wild yeast that might exist in the cider and I have pitched yeast (I typically use the Wyeast Cider yeast strain). I have read where wild yeast has made 'good' hard cider and wild yeast has made awful hard cider; sounds like a crap shoot to me.

    I have never filtered; just had a long (4+ months) secondary in a carboy.
