Lost Abbey: Cuvee De Tomme

    I recently picked up a bottle of Cuvee De Tomme (2011 vintage) and was wondering how well it ages. Anyone out there aged previous releases? If so how long should I let age for?

    One does not simply age Cuvee De Tomme.....

    I've had one that was 1 year old and it was great, I believe the general consensus is it ages well.

    Bout a year does it good, the cherries will fade on it. Anything past a year is beyond my experience.

    I had a 2 year old 2009 that tasted awesome!

    But I think 2009 was the last year I really liked fresh. Who knows how 2010 or 2011 will hold up but thats half of the fun of aging beer!

    As of last month, 2008 needs to be poured from a distance to generate a decent head. Weird.....

    I find them to age well, but IMO the 2009 is the best vintage. As with all LA barrel aged or sour beers, you need to be at least a little worried about carbonation being present. I wouldn't age the '08 and longer, and the '09 is probably around its peak right now. Although tasty, the fresh 2010 I had was fairly un-carbonated IIRC.

    Anyone notice a difference between the 2009 375ml and 750ml bottles?

    Drinking a 2011 as I type. Flavor and aroma are excellent. The lack of bubbles is not excellent.

    Yah I've heard that even when it is relatively fresh it doesn't really have that much carbonation to begin with.

    I had one of the old 05 or so bottles from Pizza Port a year or so ago and it was absolutely phenomenal. The cherries fade but are still there, and a pleasant sourness takes over. This is one of the few American beers I've had that has aged really well.
