Hi all, I' brewing Brewers Best Choc Milk Stout. I initially brewed with 4 gallons instead of 5 because I wanted a little abv boost. Recommended OG: 1.045 Recommended FG:1.010 (low end) I got 1.060 and now 1.032 respectively after 1 week of rolling fermentation (seemed aggressive). Bubbles have stopped. This is a solid 1% ABV than the recommended. What am I doing wrong? I am going to drop in some cacao nibs today and let it sit for another couple weeks. The only mistake i made while brewing was adding 1 can LME prior to boil after I steeped some grain in a bag. (2nd solo brew...whoops!) Otherwise everything went very well.
Post recipe, tell how old the yeast was, and explain how you took care of it (starter, oxygenation, fermentation temp).
How measured? ... a lot of entrained CO2 can throw a FG reading way off...let it sit for a few hours and read again.
Also please specify whether measured with a hydrometer or refractometer. A refractometer will not give an accurate reading once alcohol is in solution, the reading must be adjusted with a calculator.

I used a hydrometer from a sampling port in my "fastferment" conical.
