So a brewery near me is giving away 10 gallons of a low hop pale wort. Other than changing up the yeast, or dry hopping. What are some things you would do with the wort?

You could use steeping grains and make just about any beer you wanted to with it. Add some DME or LME and up the ABV.

What are they calling "low hop"? If it's low enough I would split the wort into small carboys and test various sour dregs and fruits.

You could also boil it down to Barley Wine strength. I would probably split into two batches and pitch a Belgian strain in one and a fruity English strain in the other. Have fun!

Take a gravity read, then add some hops and boil it 15 mins to get a BU:GU of 0.5 , you can go to many beer styles from this point.
