Unfortunately, I am pretty sure I know what location you're referring to as I've seen it myself on more than one occasion.

I work at a liquor store and this happens from time to time. Worse is when people take beers from one six pack and mix them with another. For instance we find a six pack of Sculpin with some 60 Minute in it. So someone took a few bottles of Sculpin, threw it in a 60 Minute six pack and paid the lower price. This is more offensive than taking beers from outside the "make your own" section imo.

Definitely stealing! Now, I have found store errors in these sections that I will always take advantage off. Such as ; build your own 6 at my store is 7.99, I notice some Odell Mercenary DIPA, 10.99 a 4 pack norm, made a six and smiled. Now I always check. Sculpin is 15 a 6 here. Just waiting to find some in the build your own section.
    Cheers

If you want a single of something, just ask, but don't go grabbing whatever you want

At the liquor store I work at we sell the majority of our craft beers in 6-packs and as individual priced singles for mix and match 6ers. Sometimes customers ask for a single that we only offer in 6-packs, and I will split up a 6-pack, divide the price by 6, sell the single to the customer, and throw the remaining 5 in the single beer section.

At our store, when I see a beer missing from a six pack, I can only think that it is shoplifting because more often than not the beer missing is also available for sale as a single beer.
