If you want this malt bill: 66% 2-row : 34% Golden promise but all you can get is Pils and MO would you make this sub? and if so, in these proportions? 66% Pilsner : 34% Marris Otter
Not sure what your making but will be a little brighter. I use Pilsner malt in a lot of my ale recipes. I use it sometimes for a third of my base malt. Good luck!
Maybe tweak the percentages until the recipe SRM comes out the same as the original? I.e. use color as a proxy for flavor.
That was one angle I tried. I can get the SRM's very close to each other using the same proportion. One concern is I think the flavor profile will be different. The Pils/MO combo might result in a sweeter/maltier profile. But I guess I won't know until I try.
Needless to say but the flavor expression of a given malt is highly dependent on the malting company and the other malts used within the grain bill. I have yet to brew with Golden Promise but the reputation of Simpson Golden Promise malt is that it will provide a sweet flavor profile. I have used Maris Otter Pale Malt of various types (Crisp Floor Malted, Fawcett) and those malts provided a nutty quality. I am assuming the 2-row malt is of a fairly neutral variety such that it will not dominate the flavor profile? Based upon my personal experiences and my readings I would not expect the Marris Otter Pale Malt to be an ‘equivalent’ of Golden Promise. Having stated that opinion, I would think that 66% Pilsner : 34% Marris Otter would produce a fine IPA. Cheers!
Not really willing to put numbers on it, and I've only brewed with Golden Promise once, but my thinking is that MO will impart more distinctive flavor to the beer than GP. My ballpark would be 75% pils and 25% MO to get a similar malt profile to the recipe.
You can't get 2-row? I suppose that happens sometimes, somewhere. I agree with @JackHorzempa, that the 2/3 pils, 1/3 maris will be a nice base for an IPA. I think @skivtjerry is on the right track, in terms of giving you something more like your 2-row, golden thing by subbing in a little more pils for Maris. What I really recommend is that you do it all three ways and devise a clever experiment in which no one can tell the difference.
Wait...where's the rice syrup or corn syrup? I heard you needed one of those to make beer... Like what you've got there Naugled and the advice.
I left that point fuzzy, I can get 2-row, just not enough and in time. So I'm stuck choosing from local suppliers stock. I can't answer why they are out of it. And I guess I could find it, if I wanted to drive an hour or so. I guess I could bug a couple of local brewers to see if they would be willing to part with a few sacks.
Hell yes, can't be getting too hung up on everything, and it might b better than the previous beer. Run it!
