Malt that tastes the most like shortbread

    I want to brew a Twix inspired stout. I already know how to obtain the chocolate and caramel flavor profiles, but I have never used any of the "toasty/biscuity" malts before. Which one, in your experiences, lends the most shortbread-like flavor?

    10# Golden Promise
    .5# biscuit malt
    .5# caramel 60L
    .33# Carafa II
    .25# brown malt
    .5# lactose

    Neutral bittering hops
    FO with Fuggles

    wlp002
    Ferment at 68F for three days
    On Day 4 bring down to 65F
    No diacetyl rest

    Not the same kind of beer, but Short's uses biscuit malt and lactose in their Strawberry Short's Cake.
