Is this a deal breaker if trying to stay somewhat close to style guidelines? I have found malted wheat to be somewhat neutral when it comes to most grainbills. I'm thinking it won't matter much (even@25%) given the rest of a Baltic Porter's grainbill (similar to Zek's Porter in Brewing Classic Styles). What say you?

What percentage of the grain bill will be Wheat Malt?

I would think that the flavor of Zek's Porter is driven by the Specialty Grains and the Munich Malt. I would guess that even if you substituted Wheat Malt for the 7 lbs. of Pilsner Malt in this recipe that you would likely not notice much of a difference in the resulting beer.

    Just my guess though.

    Cheers!
