Malting Emmer Wheat (Triticum dicoccon)

    Unfortunately, a couple places I have contacted either will not have malted emmer until next year or stopped carrying it. If anyone knows a place that has it in stock that would be great. However, chances are I will probably have to malt the emmer wheat being shipped to me.

    Has anybody here malted emmer before? Are there any quirks I should know of? Also what would be the best method and reasonably priced equipment I should use to malt emmer? Any suggestions will be greatly appreciated.

    A couple of recipes I am trying say to use malted emmer when possible so I want to try it out. I am doing a 100% emmer beer and a 50% Emmer and Barley blend most likely with barley malt.

    You could try spelt malt. Probably closer to emmer than wheat, and it's a bit more available.

    Have you tried contacting Great Lakes Malting in Michigan? They list Malted Farro (Emmer). Looks like they're geared toward the bulk/wholesale market, but might be willing to send a sample or give some advice. Worst they can do is say no.

    Castle Malting in Belgium lists Emmer Malt (bulk). Food for thought on a recipe with 100% Emmer....the Usage blurb in their Spec sheet PDF says:
    "German-style “Emmerbier”, ancient-styles as Gallic or Egyptian beers, or as an option to wheat as an adjunct. Up to 40% of the grain bill.

    Great Lakes Malting is the place I called and will not have emmer malt until around next year. I have contacted Castle Malting to find out there pricing and possibly purchase it for the right price. The most viable option is probably malting some of the emmer I have myself though I don’t know if emmer needs any special requirements and have not really malted anything before.

    Thank you, those links are helpful. I have germinated many things so I am should be good with the first part of this and keep the grains from becoming moldy. Though the drying and sifting parts of this might give me some difficulty.
