Mango in the secondary

    Has anyone aged on mango? I'm looking at brewing a higher gravity saison using white labs 670 and fermenting in the secondary with mangoes. I'm looking for an affordable puree, hopefully about 10 lbs. Any experience with mango in secondary would be nice too. I've heard it can be tempermental to work with. If I can't find what I really want I'm just going to use blueberries instead.

    I have only experimented with orange peel and grapefruit in the second fermenter and I had great success. I am also looking into adding mango in my second fermenter for a batch I have going now, my batch is just a 1 gallon but I think I'm just gonna add either a few pieces of peel with a bit of fruit left on it.

    Please post what you do, even if you use blueberries.

    If I can't find a puree, I may throw dried mango in at 5 min and let it sit in primary. If I do a puree of either fruit I will be racking the beer from primary onto the puree for secondary fermentation. I'll post an update, it won't be for awhile though. I'll be fermenting with wlp670 as per the brett saison fermentation schedule on the embrace the funk blog.

    I just finished a mango pale ale. I separated a five gallon batch into 1 gallon fermenters in secondary with different fruit in each fermenter. My favorites were orange peel and calamansi, peach and mango came out a bit dry and watery and with lower carbonation than the others. Smell is heavenly though.

    Did you use fresh? Dried? Pureed mango? I'm expecting a dry finish from my yeast anyway, so that's no big deal.

    1lb of fresh, pureed mango into 1 gallon of beer. Yeah I've been considering a papaya saison with a dry finish right now, curious to hear how a fruited saison turns out!

    I really like CCB's Guava Grove (Guava Saison), especially the early tart bottles. Worked really well, I thought, so I've had a fruit Saison on the to-brew list for awhile. I need to brew more, damn.

    I did a sour blonde on mango. About 7# of full fruit, fresh, peeled, seeded, chunked. Mild mango flavor and aroma. Would do more next time. I ended up DH it w/ Galaxy, Falconers Flight, and Calypso. Kinda sad it has a stale popcorn taste at the moment.

    I tried Guava Grove a while ago and I loved it, I really need to revisit. The idea for the papaya saison came after drinking Block 15's Tropical Storm. I absolutely loved it, here's the description:

    Farmhouse style ale brewed with Pilsner malts, Palm Sugar and Nelson Sauvin Hops. Conditioned with yellow papaya and blended with a one year old barrel of Ferme de la Ville Provisions.

    My flanders went through that, but then cleaned itself up a couple months down the line. I'm sure it'll go right with some extra time.

    It's starting to come around, but losing the hops.

    Ok I'm back with an update. I grabbed two of the mango pale ale bottles and tossed in a whole chunk of mango before capping it to see what the hell happened. I just had one last night and I was surprised it didn't gush as much as I expected but it did get infected (in a good way)! It was a bit funky, fruity and had a nice, mild tart/dry finish. The smell was amazing too, a blast of mango obviously, paired with peaches/citrus and a bit of funkiness. It was extremely good I wish I had made more on purpose!
