Maple Mornings clone recipe

    I know that this a complex beer to replicate but anyone has any recipe close to this one?

    I’d start with a founders breakfast stout clone — I’ve brewed if 5 or 6 times w/excellent result — readily accessible via google search — and augment w/dark maple syrup added during secondary fermentation. Good luck !!

    I’ve brewed with 100% natural maple syrup multiple times & have never gotten good maple character. Last batch used 1.5 lbs in a 5 gallon stout in secondary. Could not taste it at all really.

    Would recommend using the “fake” Log Cabin/Aunt Jamima syrup if you want the actual character of maple.

    After much research and several failed attempts, I still don’t understand how people get good maple character from natural maple syrup. Good luck!

    Welcome to the BA site and to the homebrewing forum, armandomacias. We're glad that you're here.

    Maple is one of those difficult flavors to get into a beer per the results reported by most homebrewers, but there have been many threads over the years in this forum with some posts about methods that report that it was done adequately.     That stuff will put a potent, maple flavor in your beer. I've used it and it is absolutely delicious. Will be doing a barrel aged coffee/maple stout in a few months with a second use barrel. It's awesome when added to normal stouts, as well. Will give you that rich, funky buddha maple type character (if you have had their maple stouts... On point!)

    how much are you using in a 5 to 6 gallon batch to achieve that nice maple character. I am going to order this and use it in a breakfast stout that I will be brewing for the second time. I just know it can be very easy to go over board with extracts

    I am going to be adding this to a breakfast style porter on friday. Any input on the quantity to add? I've heard mixed results on how potent it may be or how medicinal tasting it may be.

    I would like the maple to supplement the other adjuncts (cacao nibs, coffee, vanilla), so I was thinking 1 tsp for 4 gallons - not sure if this would be too supple or not.

    It depends how much maple you are after, but I've put as much as a teaspoon directly in a 5oz taster and it was not over the top. Probably could use all 4oz in 5 gallon depending on desired strength. I would find a similar Stout and do small trials for the strength you desire and just upsize based on your glass sample and how much you put in.

    hm, that's a great idea. I think i have a bottle or two left from the last time I brewed a variation of this beer, so that will be a good test base.

    If you could report back or DM how it goes. I am brewing a coffee maple stout next week and by the time it’s done fermenting you should had a good idea on how it’s tasting. Your feedback is much appreciated!

    when? secondary? bottling? boil? eat separately while drinking your beer?

    so I just kegged this yesterday. I sampled it yesterday and on Sunday.

    all together I am unsure how I feel about the beer. Perhaps it didn't sit long enough (10 days) on the adjuncts (2oz cracked coffee beans, 2 tahitian vanilla beans, 5oz cacao nibs, and 3 TBSP of Maple extract -- in a little under 4 gallons of beer) as i am not really getting anything coming through. Some vanilla sure, but definitely no maple. I kegged it on 1 tahitian vanilla (cut/scrapped, soaked in vodka) and 400ml of relatively weak cold brew.

    I am going to pull a carbed sample tomorrow (burst at 40psi, rolled for 2 minutes, sitting on 30psi now) to see where it stands, I may add some more maple extract.

    Whoops, sorry I used 1.5tbsp in the original. I added another .5tbsp to see if I can bring the maple through a bit.
