    Still really enjoying the Uncle Jacob's. Its almost gone now. This is one of the first beers I've ever cellared and it's turned out extremely well two years later! I'm pleased with how this beer has developed over time. I've had a small pour of it fresh in the past, nothing enough to review but this has mellowed well with less heat but without extensive oxidation that I can notice.

    I think they age okay. It's not bad, it's just best fresh. Nonetheless, find out for yourself, it won't be a disaster.

    2/20/13 Surly Abrasive
    Sort of aged this by accident more than intentionally. Still good but starting to take on some aging hops flavor, which isn't that appealing. Having said that, it is still better than many DIPA that are fresh. Still some fresh citrus aroma (grapefruit) and a smooth bitterness. Just less intense overall.

    Sounds like a Wake n Bake I got as an extra a couple years ago. Wake n Bake is not supposed to taste like an ashtray right????!!!!!

    Abrasive seems to hold up well. Not that any of the four 4/packs I bought this week has any chance of making it past tonight -- not that I just started on them. Have you had the latest batch of Steel Toe Size 11? I bet that holds up pretty damn good for an IIIPA as they call it at 11%. That was some good beer.

    That being said I think I'm not participating in the way the thread is supposed to flow. Sorry about that. Let us hear your cellar stories!!! Cheers!!

    Weyerbacher Sixteen

    Very good when it was released, sublime after six months & going forward. I love Weyerbacher & a number of their Anniversary beers have turned into works of art in time (I still love Fourteen & it's aging like a champ at four plus years).

    But time is beginning to catch up to this lovely brew. The honeyed sweetness & light fruits are starting to fade into more general sweet mess of a beer. Not sure if this is a phase or a true decline, but either way, I only have one or two bottles left. My wife is/was a huge fan of this one so I bought plenty, but after her first sip she declared it "not what it was". Glad we drank most of it, but it's still a "B" descended from the A/A-heights of its glory days.

    Heard from Todd @ Surly that FIVE should be drank soon and SYX should remain in the cellar for another year if you're holding bottles.

    Interesting, I wonder why that is? Five is still drinking tremendously, for me it's better now than when it came out.

    I'm sure he meant that it is drinking well right now. I agree it would probably still be good for awhile yet (I'm holding a bottle myself). Syx on the other hand definitely needs more time as it is still hot

    Black Butte XXIV - delicious and show no signs of,dropping off. I plan to enjoy one every six months or so until I run out.

    Stone IRS 2012 - tasty but I think I prefer it with only a year vs two. I have a few more and will see how it goes over the next year. Smidge of oxidation. The group loved it.

    Late 2012 logsdon seizon Really good. Tart and refreshing. Seemed fresh. One of my favorites to age and doesn't need a lot of care - I just put these in a low cupboard in my bar. I keep 10ish of these around at varying ages.

    2010 Ommegang Three Philosophers

    murky dark copper color, not really any head. any booziness is now gone from the aroma. rich malty aroma with black cherry. taste is only slightly on the sweet side, and only a mild cherry aftertaste. nice flavor. slick body, good mouthfeel.

    2011 Dark Horse Plead the 5th

    jet black, just a thin ring of dark tan head. bitter espresso and slightly smoky aroma. taste is a bit acidic, dry, but nice bold flavors. thick and oily mouthfeel. not much changed since my 2 year notes.

    Just had a 2/22/13 Blaecorn Unidragon. It was awesome. 12.5% flew under the radar, very smooth, like chocolate pudding
