Im doing a warminster Maris otter smash beer in a few days. 12 lbs Maris otter mashed for 60 minutes around 153... I have 3 hop options Simcoe Amarillo and cascade. Any opinions as to what hop will work best??? I'm not making a hop bomb but a balanced maybe 30-45 ibu beer to let the malt come thru. I'm going on a smash run to get acquainted with different hop and malt characters and this is my first use of Maris otter... I'm gonna ferment with a 1056 starter or re pitch some 1272 I got in the fridge.
