What is Cantillon Draught Belgian Ale?

I really do not know...maybe a catch all to be able to label any keg as?

This is the most likely explanation. They certainly wouldn't be the first brewery to create a blanket label approval submission for (potentially) numerous different beers.

Alcohol percentage would lead me to not think it's a catch all

5% would have covered 80% of what they brew

Unless just no one actually cares about the ABV% once it's approved?

True. For example, Southerleigh has their entire Slang series (which ranges from 5% abv lagers to a 14% abv RIS) in a single approval listing at 7.62% abv. Similarly, some breweries create blanket listings for cask beers. There's an abv value attached to it, but it's pretty much meaningless.

I know Cantillon has occasionally released an unblended 2-year old lambic in draft only, but they rarely travel very far from the brewery.

Like the ABW Heavy Machinery label - only the black IPA approval exists.

I thought TABC checked ABV though?

They do. But, maybe it's just on the initial approval?

    Brewery Approvals:
Note: I have only been putting new brewery approvals here – anything that is just getting reapproved, I do not list. Along with this, any macro brewery that is approved, I do not put. An example of this would be things like a South Korean macro brewery.

(For TX breweries: B = Brewery, BP = Brewpub)

Weathered Souls – San Antonio (BP)
El Paso Brewing Company – El Paso (BP)
Renaissance Brewing Company – Austin (BP) – I believe this place has a different name than this, but this is what shows up on the approval. I do not know the current name.
    Vormann Brauerei – Germany
    Benediktiner Weissbrau – Germany
    Licher Privatbrauerei – Germany

Probably not released yet. All the keg "label" says is the exact same thing with the keg size.
