Mayflower Autumn Wheat Clone

    Hello,

    I just tried some Mayflower Autumn Wheat, and loved it. Its a dark American wheat beer.

    I think I am going to try to do a clone, but I have no idea where to start. Can anyone offer some suggestions?

    That is useful. So would you say some thing like this maybe for grains?

    10-12 lb Pale Malt
    .5 lb roast wheat
    .5lb cara 40

    Then a Wyeast American ale, or US-05, with a blend of German and American hops.

    Way too much grain. That beer is only 3.9%.

    I'd go with something like

    1:1 ratio of Pale Malt and Wheat.

    4 lbs Pale
    4 lbs Wheat

    Then maybe a little Munich and some Chocolate malt, in whatever ratio you fancy.

    Make sure to throw in some rice hulls to ward off a stuck sparge.

    You can, sure. Could use Midnight Wheat instead of Chocolate malt...no problems there at all.

    Also, I take back my previous statement about it being only 3.9%...it's actually 5.8%...not sure where I saw the 3.9%

    I'd add a lb to each of the Wheat and Pale, or bump up the Munich to reach the desired ABV. Depends on how sweet that beer is...not had it personally...but it's a Dunkel...and they aren't particularly complicated.

    I think you were thinking of their Summer Rye? And I'd maybe use a London/British yeast.

    I think the bear I am talking about is a wheat. The label reads "Dark Wheat Bear".
