Memorial Day Weekend Brew

    Brewing a pale American wheat ale tonight with Centennial and Amarillo. Light, crisp and hoppy! The last one I brewed was finished with all Columbus and it is delicious, but the keg is going fast. This brew I am looking for something with a more floral and fruity flavor/aroma. Half pils and half wheat it is amazing how crystal clear this brew gets.

    Gonna brew an all galena pale ale. Hopefully it comes out good. I've never used galena before but they smell amazing. bitter to 50 ibus 1oz at 15 and 1.5oz dry hop for a week.

    Just waiting for my HybrIdPA to cool down so I can pitch my starter. British and German malts, American hops and WLP007 are the highlights here.

    Carteravebrew and I are at it again. Barley wine partigyle today and a dry hopped lager with the second runnings. Wives aren't happy.

    How far are you going to push the temps? I did one w/this yeast maybe three months ago. IIRC I took it to 93*F. So far I like it, but I'm waiting for the Brett to step up.

    I'm just letting it do its own thing at about 75. I'll probably keg it once the gravity doesn't move, but adding additional brett isn't out of the question since people say it is subdued in the blend.

    8.0 oz Caravienne Malt (22.0 SRM) Grain 5.7 %
    0.20 oz Summit [15.80 %] - Boil 60.0 min Hop 11.0 IBUs
    0.30 oz Amarillo Gold [8.50 %] - Boil 30.0 min Hop 6.8 IBUs
    0.30 oz Centennial [9.20 %] - Boil 30.0 min Hop 7.4 IBUs
    0.30 oz Amarillo Gold [8.50 %] - Boil 10.0 min Hop 3.2 IBUs
    0.30 oz Citra [12.00 %] - Boil 10.0 min Hop 4.5 IBUs
    0.30 oz Centennial [10.00 %] - Boil 10.0 min Hop 3.5 IBUs
    0.50 oz Citra [12.00 %] - Boil 3.0 min Hop 2.6 IBUs
    1.00 oz Citra [12.00 %] - Boil 0.0 min Hop 0.0 IBUs

    1 Dry English Ale (White Labs #WLP007) Yeast

    Est Original Gravity: 1.040
    Estimated Alcohol by Vol: 3.7 % Actual Alcohol by Vol: 4.7 %
    Bitterness: 39.1 IBUs - should be high - did a hot stand
    Mash: 155-157F
    Ferment: 65F
    Sparged too long so I did a two hour boil.


    Also I played around w/the water. Did 50/50 home/distilled. Then I added CaCl and Gypsum. And I've never done a water test yet which of course is dumb.

    No brewing for me. Bottled my Witbier and the Gumballhead clone I forgot to take the StarSan oit of the fermenter on. Added too much sugar to boost the OG and hit 6.6% ABV. Tastes great though, drank 4 tasters worth of it flat and room temp.

    Brewed a Citra Saison, and bottled a Citra/Maris Otter SMaSH APA, all before work at 5pm. Busy Memorial Day for me.

    Plenty of time as long as your temp control is good.

    Yeah - I'm just a traditionalist and usually brew it up in March...at least this way I'll be slightly less tempted to tap it before Labor Day.

    Amber Rye with Cascade, Willamette, and Palisades for me. Brewed it up with my father in law while my wife was at a bridal shower. Very smooth brew day. We're stoked.
