I've got a regular trade partner who loves bocks, AAL's, zwickels, etc., and I want to send him an Eisbock but I can't think of any local places that brew this one. Anyone have any recommendations? Doesn't have to be MN local, but out of Delaware distro and available here or WI would be great. Thanks!

Honestly the only brewer I've ever seen do an Eisbock in Minnesota is Northbound, and its been in very small batces and was out for a short time a couple months back. Indeed might still have their Bock on tap, maybe you could get a growler and freeze it yourself!

Yea it's mostly a shot in the dark, I figured it's not easy to find a place making this. I'd also love to hear reccomendations on Zwickel's from MN as well!

It really irks me that no one has released a beer called Minnesota N-Eis Bock.

With all of our archaic laws is it even legal for a brewery in Minnesota to make an eisbock? Isn't freezing off a portion of the water considered a form of distillation?

My guess is as long as it stays under a certain abv it's alright, I'm thinking around 15%. I also won't be surprised if the freezing process wasn't widely known enough to have specific laws for it in general or separating it from more conventional fermentation and distillation processes.

It's a matter of how much you concentrate it not level of ABV that's reached. And yes, there are specific rulings on it.
