So, I am going to be brewing a clone of oldstock's Mo Bretta. I have vial of yeast bay's lochristi brett blend. The website says do not make a starter with the blended yeasts because it will mess up the ratios. I always make a stater...should I not worry and just pitch the vial. Also, has anyone used this yeast and tasted the strawberry funk? Thanks.

That's moreso for multi-organism blends, ie Sacch and Brett - with a blend of Brett strains, the proportions will change a bit but shouldn't throw off the blend entirely.

No, the vial only has ~2 billion cells in it at packaging, not only do you want to do a starter, you probably are going to want to do a multi-step starter to get up to a decent cell count.

Please see the Product Information and Policies section of The Yeast Bay website. We indicate that especially with blends of all the same species, starters can be done with minimal effect on the ratios. Even with both Sacch and Brett, there is usually a Sacch dominance in the blend, so the small change in proportions will not have a huge effect on the final product.

    Cheers!
