Modifying Side-by-Side Refrigerator for Cellar?

    Anyone ever tried modifying a side-by-side to use as a cellar? I've seen lots of y'all who have installed temperature overrides on standard refrigerators or freezers to keep them at 55, but haven't seen anyone using a s-b-s. Long story short, a side-by-side refrigerator/freezer is coming my way and I'd love to be able to make it work instead of buying a traditional. I'm assuming I'd need install new external temperature gauges on both sides?? I'll probably keep the unit regardless, but curious if what I'm thinking is even doable. Thoughts??
