More help on Imperial IPA....

    So I've decided that I am going to separate my 5 gallon batch three ways. I am going to bottle about 30 bottles right away and age the remaining on two different woods (8 or 9 bottles a piece).

    So I will have about one gallon of beer a piece to store in something with wood chips and am kind of lost as to how to do it. Can I just put each one in like a 2 gallon glass jug and seal it with the wood chips in it or will it still be producing CO2 and require an air lock to release pressure?

    Or does anyone have a better way to do it? 3 gallons bottled after dry hopping, one gallon aged on oak chips then bottled, one gallon aged on cedar and then bottled.

    And another question.....do the wood chips just go straight in or do they have to be sanitized somehow first?

    If you are planning on aging a beer it should be done in a vessel with virtually no headspace, unless you purge it fully with carbon dioxide. Further, I would use an airlock as any time you disturb a beer it can push CO2 out of solution, even if the beer is fully fermented.

    Also, most people will suggest either sanitizing the wood by boiling, steaming or soaking in a neutral spirit. This also will remove some of the potential tannins from them.
