Mosaic/Galaxy IPA Critique

    It seems like every new IPA I try has a Mosaic and Galaxy hop combo and I cannot get enough of it, so I decided to throw together a recipe I hope will continue my appreciation of these hops.

    I am using Columbus for bittering as I have some cones laying around and this will be my first time using sugar to boost ABV and dry it out the beer some. I may also consolidate the base malt to either regular 2-Row or the Marris Otter. I usually use US-05 but also saved slurry from my all Columbus IPA I made that I can make a starter and use.

    7 lbs 8.0 oz Pale Malt (2 Row)
    7 lbs 8.0 oz Pale Malt, Maris Otter
    8.0 oz Caramel/Crystal Malt - 40L
    8.0 oz Corn Sugar (Dextrose) [Boil for 5 min]

    0.5 oz Columbus (Tomahawk) [14.00 %] - Boil 60.
    2.00 oz Mosaic (HBC 369) [12.25 %] - Boil 10.0
    2.00 oz Galaxy [14.00 %] - Boil 5.0 min
    2.00 oz Mosaic (HBC 369) [12.25 %] - Boil 5.0 min
    1.00 oz Galaxy [14.00 %] - Boil 2.0 min

    2.00 oz Citra [12.00 %] - Dry Hop 5.0 Days Hop 11 0.0 IBUs

    Yeast:
    US-05 or WP001

    Mash @ 150 for 90 minutes.

    Beersmith numbers based on 60% efficiency (my efficiency sucks.)

    OG: 1.067
    FG: 1.010
    ABV: 7.4%
    IBU's: 74.9

    If it were me I'd go 100% maris otter or 80:20 (MO:2 row), maybe add 7-10% victory, reduce crystal and sugar to 1/4# or get rid of both. Increase the ibus by 5-10. Why citra dry hop? It'll be nice but why not use some mosaic and galaxy for dry hop. If its a quantity issue then mix all 3 equally. I'd be concerned that this could get oniony. Are you using 2012 or 2013 crop? Not sure how the 2013 are but the 2012s were oniony/diesel for all 3 of these hops.

    I agree with the Citra dryhop comment...use Mosaic/Galaxy/Columbus instead

    Also use some carapils or flaked barley (which I prefer) to help with the body.

    Hmm...I have Mosaic and Galaxy sitting around. Not sure I've had a commercial example of these two hops mixed together, but this sounds pretty intriguing.

    I agree with the comments of nixing the citra and dry hopping with the hops already in the boil.

    Definitely let us know how this turns out. Will likely brew something similar in a months time.

    I don't think you will find much discernable difference between a 10, 5, and 2 minute hop addition personally. I also wouldn't dry hop with citra, as you will mask most of the mosaic and galaxy qualities. Considering Mosaic and Galaxy are both high alpha and your recipe only calls for a little bittering addition, I'd use one of them in lieu of columbus probably.     To answer a few questions:

    1. I only put Citra in there as I have dry hopped with it a few times and I like the results. I would agreed that changing the dry hop to Mosaic and Galaxy would probably be better.

    2. I may skip the 10 minute addition

    3. I like the 70/30 split on the base malt but may switch to regular 2 row being the majority. I personally like 2-Row better in American IPA than Maris Otter. I like IPA dry.

    4. I do not know what year the crop is for the hops. Not sure the LHBS would know either.

    5. I am sure my efficiency issues are due to crush and water pH. I do not have a grain mill yet and water chemistry makes my head spin. The extra few $'s per batch will continue until I grasp the concept.
