Mosaic Hops

    La Cumbre did a pale called Old Hop New Hop this year - Simcoe and Mosaic. Maybe the best pale I've had - dry hopped with Mosaic, it had a tropical, candied goodness to it.

    This. I recently brewed a single hop Mosaic IPA and I got tons of Blueberries. My friends who tried it absolutely loved it but they looked at me like I was crazy when I told them that's what I was tasting.

    Sixpoint and disappointment go hand and hand. They should just change the name of the brewery from Sixpoint to Disappoint.

    Fathead's IBUsive is another excellent Mosaic-centric beer.

    Mosaic hops are awesome. I always get tropical fruit notes and some stone fruits. If you want a beer that really showcases it well (without being a single hop beer), then try Great Lakes Chillwave (formerly Alchemy Hour).

    I've never had a single-hopped Mosaic beer, but I am a big fan of this new breed of "tropical" IPA. The aforementioned Dirt Wolf and Deschutes Fresh Squeezed are two of my favorite beers, both feature Mosaics.

    I currently have my own take on a tropical IPA in primary fermentation. My original plan called for Warrior bittering hops with a ton of late additions of Citra and Mosaic, but I ended up replacing the Mosaics with El Dorado due to availability. I'm hoping it works out well.

    Victory's new Hop Ranch has a huge Mosaic hop presence. I get a sweet, juicy, almost tart pineapple note most times with Mosiac. Very tropical, with some floral sweetness. Great varietal.

    don't know if this has been said or not because I haven't read through the whole thread, but odell featured the mosaic hop in woodcut #6 and it was a genius use of it in a beer that I think didn't get enough attention. it inspired me to homebrew with it quite a bit, and its something that always turns me on now. great hop.
