Mosaic pale/IPA

    Thinking of brewing a batch of 100 percent mosaic but have never tasted a beer with them has anyone brewed one and if so how was it and what were characteristics of the flavor

    I love them as a flavor hop but not so much as a bittering hop.

    You could always do some research of your own. I see that you're in Iowa, go pick up some Sosus from Toppling Goliath. When I had it, I got mostly sweet tropical fruits and resinous, citrus-orange character from the beer. That said, I'm not sure how often it is brewed.

    I made a pale ale with all mosaic except for bittering. I thought it was awesome, unfortunately I am not good at describing hop flavors. The flavor was great.

    Yeah, just go pick up a Sosus, brewed and bottled twice a year. Literally shelf turds down here in IA. Just bustin' your balls.

    Mosaic is quickly becoming my favorite hop. It's fantastic all alone but also plays VERY well with others - particularly citrus, tropical, and fruity hops.

    I get mostly tropical fruit with a hint of citrus and pine. Kind of similar to Simcoe but without the "cat pee" that some people get. Others have noted blueberry-like flavors with Mosaic but I have never detected anything like that.

    I have a double IPA going now that was about 60% Mosaic with the remainder split between Galaxy and Nelson. It is about to get the second charge of dry hops. So many good smells and tastes coming out of this keg already. :slight_smile:

    Consider adding El Dorado to that list next time...perhaps replacing Nelson. I made and El Dorado and Mosaic APA that turned out excellent, though I used El Dorado for bittering...and did not enjoy as much. Late addition El Dorado is awesome though.

    Thanks for the input as for sosus I can't even get a single bomber of the other stuff did land a case of sue tho back in October and that was the last time they distributed to dubuque where I'm from

    Dude if you can get Victory Hop Ranch its got Mosaic in it, and its fantastic. I just got a 4 pack last night and it smells like straight up pineapple/peach juice! I dont get any bitterness, its a very sweet beer, but it works. I think they might have hop-bursted when brewing it. Tastes even better, I do get just the slightest hint of blueberry, but I taste peach/apricot, mango, passionfruit and theres just alot going on there, and Mosaic is a great name. I just ordered a pound of it to make a SMaSH beer with it and Maris Otter. I keep running into small problems, so I probly wont get to brew until next weekend. Im also going to make an IPA with it, and a few other kinds of hops tha are similar. If you make yours an IPA care to share the recipe? And please let us know how it turns out, Im sure it will be awesome.

    I'm gonna do an all mosaic IPA I think.. The blonde I did was good, albeit a bit sweet hop flavor.

    It needs a hard and heavy bittering addition and then I think it can work well. Probably will infact use some centennial or Simcoe with it.

    Recently did an apa with nugget as the bittering hop and mosaic as the large majority of late additions. Turned out very nice. MO base with some honey malt and wlp013 yeast.

    Mosaic said to be a Simcoe love-child.

    BYO published a recipe for a Mosaic pseudo-SMaSH JUL/AUG-13
    OG 1068
    BUGU 0.96

    Brewed it on Valentine's day.
    Test drive planned for mid-April.

    Hop was pricey @ 2.99 / Z and limited to 4 per order.

    Got a pound for 24 bucks. Just made 2 SMaSH beers with it, using Maris Otter, one with 'Murican yeast one with English. Its the best smelling hop Ive ever brewed with. From whats coming out of the airlocks, it smells really really good. Should be ready to keg in just under 2 weeks from now. Cant wait!

    I would be worried an all mosiac would taste like candy .. not in a good way. I would be interested to hear what everyones beer turns out to taste like.

    That's pretty much how I would describe it. Very similar to simcoe but slight diesel fuel instead of cat pee.

    I get a lot of tropical fruit (guava), citrusy, piney, and catty. Seem like a cross between simcoe, citra, and nelson/galaxy. When the 2012 crop was fresh they were pretty amazing but they seemed to turn fast to more onion and diesel the more I brewed with them later in the year. I like the bitterness from them, seem to get a lot of grapefruit rind bitterness. I still have a few more ounces of the 2012 crop that I'm going to try and use sparingly and see if I can avoid the onion/diesel notes. At this point, I wouldn't go 100% Mosaic if they are from 2012.

    I have no idea how the 2013 crop is. Anyone know?

    Just brewed 5 gal on Sunday and 5 gal on Tuesday all Mosaic from '13. They smell amazing. Ill be kegging whenever theyre done fermenting and possibly "drykegging" with an oz in each. I will definitely post on my results.
