..from Pittsburgh later this summer. Was just wondering what some of the good local/NC breweries to check out would be, what the liquor laws are like (hopefully not as bad as Pennsylvania's). Any advice or input would be very helpful!

You'll love Raleigh. It is a very nice and smartly run city. The beer scene has gone nuts in the last few years and your options will be plentiful. Go over to the cool little Saxapahaw north of Chapel Hill off of N.C. 54 and visit Haw River Farmhouse Ales. Once you're settled in, drive to Asheville for a few days and you'll have a blast. North Carolina and Pennsylvania are both big states with a great mix of rural and urban. Ocean and mountains do well here. Go to Greensboro, Winston-Salem, Hickory, Charlotte......there's a lot to see and learn.
The ABC laws here are more sane than Pennsylvania's laws. Cheers, good luck and welcome to you!

As far as alcohol laws: wine and beer can be sold in any type of store, liquor is sold exclusively from state-run ABC stores (ugh), and no alcohol can be sold between 2AM-7AM (or until Noon on Sundays). Beer is capped at 15% ABV. No happy hours are allowed either (all drink specials must last the whole day).

Also, the ABC stores are closed on Sundays. But you can drink liquor in a bar or restaurant on Sundays after 12:00.

They take the noon start time for alcohol sales on Sundays very seriously too, you can be in somewhere that's open before noon (grocery store, restaurant, airport, etc.) and they still won't sell you a beer or anything else until the clock strikes 12. It makes the timing of your runs on Sundays before football starts very crucial.
