Mr. Beer Kit questions/issues

    Sooo. My fiance got me the mr beer kit. Sorry to bring it up. I've buzzed through a few forums and dome some reading on it. I followed every step perfectly and kept on eye on the temp during ferment. Still turned out horrible. I've read possible old malt and or yeast. Any other ideas? I know have a new batch going using some other products and yeast and have also invested in a better brew kit and products. Thanks and sorry to bring up the me beer

    Hello and welcome.

    Can you describe what you mean by "turned out horrible"? Perhaps a quick summary of the recipe and process might help also.

    Was the taste that you had before or after bottling and carbonation?

    It turned out cider and kind of bitter and after carbonation

    Whenever turned out with a kind of sweet / sour cider flavor. I used the exact process for brewing that they recommend and I used their pilsner and lager kit

    Their instructions call for ambient temp of up to 76F. What was yours?

    It was stored in my basement. It stays around 70 to 78

    Sweet could be bad attenuation. How did you mash? Did you take gravity readings before and after fermentation?

    If it tastes sour, that could suggest an infection.

    The mr beer kit is extremely basic and does not come with and hydromiter (witch I now have) and is %100 an extract kit. Sour I guess isn't really a good word. It's very sweet and has a cider kind of flavor to it.

    Could be any of several things. Perhaps the beer just needs to sit a bit longer to clean up some of those flavors. Or perhaps the hops weren't stored well, and they didn't add enough bitterness to the beer to offset the residual sweetness. Or the yeast could have been crappy.

    I thought that maybe it was the yeast. I was very anal and exact and everything I did I have a new batch going using other ingredients and yeast I know is good. Thanks foe the help.

    Cidery
    Cidery flavors can have several causes but are often the result of adding too much cane or corn sugar to a recipe. One component of a cidery flavor is acetaldehyde which has a green-apple character. It is a common fermentation byproduct and different yeasts will produce different levels of it depending on the recipe and temperature. Cidery flavors are encouraged by warmer than normal temperatures and can be decreased by lagering.

    If it is caused by aceto bacteria, then there is nothing to be done about it. Keep the fruit flies away from the fermentor next time

    Mr. Beer comes with sugar so that's one possible issue. But its more likely a temperature problem. The temp inside your fermenter can be a few degrees higher than the ambient. So your 78 could be 81F or so, which is way too high for a "lager"

    Thanks! This is another though that I had. My fermenter for this batch is actually in my room this time at 68
