Multiple DME additions... Someone teach me WHY

    looking at a recipe such as this...

    Basic Extract American IPA

    1.065-1.067 OG / 1.014-1.016 FG

    6 Gallon Boil / 5 Gallon Batch

    7.00 lbs. Briess Golden Light DME or Muntons Extra Light DME (half added at boil start, half added at flameout)
    0.50 lb. Crystal 20 or Crystal 40 (crushed & steeped at 155 F @ 30 mins)
    0.50 lb. Corn Sugar, or Table Sugar (added at flameout)



    Why is it that many recipes such as this instruct brewer to at half malt at boil and half malt at flameout.

    Also, can someone explain exactly what this particular recipe is suggesting we do with the crystal malt? Is that instructing the brewer to steep the specialty grain separately and then add the extracted malt potion to the boil with 30 minutes remaining?

    In regards to the split of DME:
    This is to get better utilization of hops (in partial boils) and also to keep the color from deepening too much. In a sense, malt extracts have already been cooked once (you could even say overcooked). A late addition will keep the color down.

    As for the @ when it comes to your steeping grains, it's because these goddamn kids today can't type shit out properly and take too many short cuts. A normal person would write
    0.5 lb. Crystal 20L (crushed & steeped at 155F for 30 mins)

    This is to be done before the boil. But this buttmunch decided to put the "@" sign where he should have written "for", even though he wrote out "at" earlier, and made it confusing. I'll bet his/her boss has a ton of respect.

    Sorry, I've been drinking and dealt far to much with folks in their early to mid-twenties today.

    I've seen recipes that use 25% of the DME at first boil and 75% at the end, so the percents are probably not a 'carved in stone' rule. Having more DME at the end will protect better against scorching the DME if you're brewing a light-colored, light-flavored beer.
