I'm wondering if I'm the only one (rarely in anything!) that has a different opinion of how a certain beer tastes over multiple tastings? I am not including adding age to a beer (i.e.-more than a month). I just drank another of my Founders Imperial Stouts and it seems much more pleasing to me than the last one I had about 10 days ago. Mostly always drink beer without food to accompany as I prefer it that way.

It happens sometimes. Could be palette fatigue. It could be something you ate earlier. It could also be that you weren't "in the mood" for a particular flavor.

Yes, I believe multiple tastings can change your opinion of how it tastes. It's like when you watch a movie and then see it again sometime later and find things you missed the first time. Sometimes, it gets better and sometimes it is the same or not as good. Of course there are other factors such as maturing taste buds over time to different styles, physical state/mood you're in while drinking it and way in which you drank it (tap, bottle, growler, etc.).

Yeah, this was pretty much the exact same setting: same time, same "vintage", same glass. Oh well...very tasty in any event. That's why I bought a case!

Any beer that underperforms the first time for me can usually get a second chance unless its just pure swill. I find my opinion can be modified sometimes, however its more a subtle difference .

I've seen a bit of fluctuation with Double Jack.. The biggest difference is Stone Enjoy By. I haven't liked it since last July.

Did you just have your teeth cleaned? Things always taste different after a cleaning. Same goes for brushing!i

Almost all the time. Usually the range of opinion isn't as far as from like to dislike, but for the most part it takes me a number of times to really process a new beer.

Actually, there are reasons to believe that the food eaten earlier in the day (or other things consumed earlier) can have some effect even though you don't have the food with the beer.

Generally I try to have multiple pours over time before adding a beer into my regular shopping list.

^ This. All the time it happens to me. I like to have at least a four pack of a beer and not really review it until I am on my last one. The more you drink a beer the more it's nuances will present themselves. =)

Another thing to consider is the impact of unrealistic expectations can have on your first experience with something. A couple more tries tends to mitigate that effect for me.

I call that "acquiring a taste" for something.

Most definitely! Over multiple tastings I find myself picking apart a beer's flavors much better. Whether that's just focusing more on a particular part of the beer over further tastings, growing my tolerance for it if it's not a beerstyle I typically like or simply because I'm more aware of what to expect after having had it the first time.
