Muscadines in beer?

    Has anybody done it?
    My dad will be giving me a lot of muscadine juice. I was thinking of adding the juice to a no boil berliner (after kettle souring) and then fermenting with saf 05.

    I have a brett IPA that is in primary that I could add some whole muscadines to

    I was also thinking of doing a brett mead with muscadine juice (i would mash some oats to get some starch since brett doesnt produce glycerol)

    I want to avoid boiling or heating the muscadines since they are so lightly flavored.

    Does anybody have any experience with this?

    I used muscadines(whole fruit) in a Berliner once, problem was my wort got oxidized before I kettle soured, and it ended up cheesy as all get out. Couldn't really tell until it was carbed up. But underneath the cheese there was some nice vinous and fruity notes. Definitely going to try it again, and I think the juice would also play nicely with some funk.

    I used a combo of muscadines and small wild grapes to a quick soured berliner last year and it turned out great. I added the grapes (frozen then defrosted and mashed) after primary fermentation and let sit for around 2 weeks or so and then bottled.

    I'd be making some wine. ^.^ If not, go with the Berliner.

    Of the dry wines I've made and haven't backsweetened, I notice that they run thin, a little harsh, and a little boozy. Maybe try to keep a few gravity points high at the end to compensate for this.

    BTW, this would be a fun beer to tuck a 6er away for 18 months and just see what happens. :slight_smile:
