Need cellaring help with theses beers.

    Hello, I currently purchased crooked line LABYRINTH, blaecorn unidragon, stone IRS, DFH bitches brew, and old guardian. I bought 2-3 of each. One is to try fresh and the others I want to put some age on them. I'm just looking for opinions on how long each one should be laid down for? Or to be consumed fresh.

    IRS and Old Guardian are both good to go for years to come. After one year, you'll see improvement. I've had IRS about 6-7 years old, and it was still phenomenal. I've had Old Guardian at 2-3 years, and figure it could easily go to 5-6 as well.

    IRS is really good but ive only had this years version so I don't know what its like with age but imagine it would be great. Recently had an Old Guardian as well and that baby was hot, definitely could use some time IMO.

    I would imagine all the beers you listed will age well. They are the right styles and ABV. I only have experience with the Stone brews, but I have a DFH BB in the cellar as we speak.

    As a fellow 12th man I make these recommendations:

    Labyrinth: dunno, but Id judge from fresh if it could go more than the first year based on sugar and alcohol content.
    Try one every 2 years if you like.

    Bluecorn Dingleberry- never had this beer before, sounds delish tho :slight_smile:

    IRS- I personally don't like these older than 5yrs tops, flavors really get old and it starts going watery.

    Bitches brew- I've heard of them going 2-3 years, outside of that I dunno.

    Old Guardian- pretty decent after 5 years, going back towards 8/9 it starts to lose my favor.


    Now that you have these, pick up the same next year, that way you can really start to see how those brews evolve. I've learned for myself what beers meet that "sweet enough" threshold to warrant holding onto for a year or more. You might also want to look into doing this with other beers like Sierra Nevada Celebration, Deschutes Jubelale, and any RIS or Bwine of course will go the distance. Most important thing about this: Forget you have the bottles and leave them the hell alone until enough time has passed! Very hard to keep your hands off them if you check on them "just to see" as I myself always did wanting to just try one to see how well it's changed....and doing this several times in the first year till nothing is left...

    Thanks for the insight. With the stone brews I definitely want to grab fresh bottles each year and do a vertical tasting.
