Need help, forgot to add yeast!

    Dump. Read some how to homebrew books/take some classes if any available near you. At least you hit up a forum before you went any further. Making beer is like making food. Sanitation and process are your best practice.

    While this is obviously a practical discussion on the sanitation, I also see it as a philosophical discussion about brewing. As I home brewer, when I am making a batch, I often think back on the pirates of the old days and and the monks 1000 years ago. I like to imagine pirates brewing a batch on an unknown island, or the monks stirring their wort in dark monasteries.

    While they didn't have the technology, clean running water, proper heat, equipment, etc etc, that we have, I think there is still value in remembering that great, satisfying beverages were created anyway.

    I would brew the batch as long as there is no determinable infection. Yes, I would be skeptical of it for a while, but it might be 100% ok. The pirates and old monks would laugh...hahah...1 week with all your tech and sanitation.

    You can certainly imagine that, but as a piratical history buff I have to say that I can't think of any documented examples of pirates (of any era) brewing, IIRC. Nor have I ever seen it even discussed as an undocumented possibility (until now).

    They certainly liberated alcohol when they could. They also traded for it.

    I'm with @OldBrewer on this one. (and I'm also a little late to chime in). If it still smells ok, I'd bring it back to a boil for 10 min, or at least a high enough temp to pasteurize before just dumping the batch. Co-pitch some sacch and brett, and see what it does over time. I'm also having doubts that the OP is even going to be back... :rolling_eyes:

    Well, those Pirate and Monk batches would contain some alcohol so perhaps that meets the criterion of "satisfying"?

    I suppose it is possible you might enjoy drinking those beverages but I am 99.999999% sure that I would not.

    I prefer to brew beers that do not have off-flavors from contamination.

    To reboil and then cool my wort and all this hooplah to save a batch that may be f****d up anyway. It’s easier for me to just make a new batch. I don’t see the point of wasting time to save very little money.

    No.... I value my time and to go through all this and maybe have to toss it is a waste of time. I’d rather Brew it again.

    +1 to all the "dump it" advice. And consider taking a look at your process so that you make the beer that you intended, instead of trying to salvage one you didn't.

    We must also keep in mind that what people did 100 or 200 years ago helped them build up a resistance to certain things. In our current state, we usually get sick traveling to another country and drinking their water. So that said...
