Odd problem: I've got a bunch of bombers of a very rich / sweet 16% American strong ale (He'Brew Jewbelation 16). Even though this beer is great, it is a little too sweet for my taste. I was thinking of adding coffee or espresso beans to some bottles as well as some oak chips that I want to soak in bourbon. I already have American oak chips.

Can anyone help with recommendations on (per bottle):
    -type of beans
    -amount of beans
-type of bourbon for oak chips
-how long to soak oak chips
-how long to have oak chips in bottles
    -sanitizing techniques

I appreciate any help that anyone can give.

You won't really be able to add any of that to the beer bottles without causing a HUGE mess. Oxidizing the beer, and causing it to probably go flat..

I'd blend it with another beer, or suck it up and drink it/share it.

Unless you've got a way to pour the bottles without getting much air in them, de gas them, add your ingredients, flush with c02, carbonate it and re bottle it..

    Chances are, you don't.

If I were going to do it, I'd guess I'd do something like this:

    - Sanitize large mason jar, ring, lid and oak chips. Add bourbon and chips to mason jar. Taste weekly until ready.
    - Add 1 oz of whole coffe beans. I don't know if coffee beans need to be sanitized, but I've immersed them into Starsan solution before with no problem. Taste every 12 hours until ready. Remove beans once ready. (Maybe have a second large mason jar ready to just dump the liquid and leave the beans.)
    - Open bottle and fill head space (neck space) with bourbon/coffee bean tincture all the way to the top of the rim until it barely begins to overflow.
    - Cap with sanitized capper. Dunk entire bottle in sanitizer. Invert bottle a few times. Store in cool, dark place for at least a day or so.
    - Taste it. If you want more bourbon character, then dump some of beer out next time, and refill the bottle all the way to the top of the rim. Sanitize. Invert. Etc.
    - Do this one at a time until you found the right ratio.

When dumping out the beer, I would dump it into the bourbon mixture. Make sure you sanitize (hold flame to) the lip and neck of the bottle before pouring. If, after your first bottle, you find that by filling just the neck space made the bourbon character too strong, have a bottle of spring water with you to top up the beer/bourbon mixture. Use a water bottle that has the squirt spout to make it easier.
