New Beer Cellar

    I got a new wine cellar, and obviously it's storing beer too. I don't have tons of space for beer, but here's what I put in there so far:

    If anyone has input regarding how long I should store any of these before drinking, which ones will last the most/least amount of time, and if there's any beer I must add to this list, I'd love to hear it (I'll need to replace the Des Rocs at the very least) thanks!

    Question 1) Have you drank them before?
    Question 2) Why do you want to cellar them
    Question 3) What are you hoping to accomplish by cellaring them?

    Dark Force Reserva
    Panil Barriquée
    Cuvee De Tomme
    answer 2) Some beer improves with age, I tried to select ones that would age favorably

    First off, WTF is up with your formatting?

    Second, very few beers actually improve with age, and which ones do is largely subjective. There's not much point in aging something you haven't tried, as you have no baseline to compare to.

    I've got a friend who will admit they have wasted a lot of good beer by letting it age past its prime. Cellaring can be a double edged sword. Sure it's fun when it all works out, but damn it when you let a few 20$ bottles waste away to the point they are not palatable any longer.

    I'd start with a 1 year max, see what type of results you get, and then experiment with new beers for longer periods.

    Great start to a cellar.

    Unibroue 17 Grande Réserve - BSA, should do fine with some time on it, Unibroue actually brought it back so consumers could age some
    Allagash Curieux (Bourbon Barrel-Aged Tripel) - not recommended by Allagash for aging (technically they only recommend the Interlude for aging), but it's still a great beer with a couple years under its belt
    Dark Force Reserva - no idea
    Trappistes Rochefort 8 - you can easily get more than a couple years out of this one
    Trappistes Rochefort 10 - you can get upwards of a decade or more out of the 10 if stored properly...really wish they'd put this one in a magnum instead of the 8...
    Orval Trappist Ale - best fresh, and with no more than a year or two...goes downhill after that
    AleSmith Grand Cru Ale - have had it with 3 years on it, was solid, no direct knowledge beyond that
    Panil Barriquée - opened a 2005 in the last 6 months or so, was delicious
    Cuvee De Tomme - still sitting on my 2009, but other reports are favorable
    Achel Trappist Extra - no idea, never aged any

    Some things you might want to consider given your selection above:

    De Dolle Stille Nacht & Oerbier Reserva
    Chimay Grande Reserve
    Allagash Interlude
    BFM Abbaye de Saint Bon-Chien
    Rodenbach Vintage 2007 or 2008
    Southampton Grand Cru

    * I have to disagree with you about Orval. It certainly can go according to my tastes.

    Re to the same beer to the OP...whatever you do, when you decide to drink it, refrigerate it for a day. At cellar temps. it's a huge gusher.

    Thanks, I'll probably do that anyway since they have to be stored sideways, storing them in the fridge for a day will settle that yeast back to the bottom (if it ever leaves the bottom at all). I plan to drink the Orval in a year. I've had them fresh and at 6mos, 1,2 and 4 years and they're all very different.

    I recently had a bottle from 2002 and 2007, neither was, in my opinion, as good as a fresher bottle. To each his/her own though.

    Age the Trappist bottles for 1-2 years. Drink the rest now.

    No they don't. I don't think anyone recommends storing capped beers sideways, and for the durations you're talking about it doesn't matter for corked beers either.

    Why would anybody cellar anything that isn't a belgian style? :astonished: That's my 2 cents.

    While most of the beers in my cellar are of the Belgian variety, a well aged English or American barleywine can sometimes be hard to top, my .02.
