    Theres better cooks on here than me for sure! I hated it first time I had it then discovered how much of a difference freshness and how it's caught make. Fresh, harpoon caught is the real deal. Right or wrong I run high heat, 3-4 is minutes a side for inch thick cuts looking for 135 and not over 140F. Let it rest a couple minutes. We use mayo as a binder, simple seasoning usually aalt/pepper or a Mediterranean seafood mix we like. Scares me every time I cook it (or tuna) - hurts a lot more than burning a hot dog if I jack it up!

    Skydance Kavorka Bourbon Barrel Aged Cherry Chocolate Imperial Stout, 13.0% ABV; 4.33 overall

    Pours an effervescent & ruddy chestnut with one finger of fast falling mocha colored head. Traces of head retention, some viscosity, no lo lacing

    S: Bourbon notes, dark chocolate, cherries & a little vanilla

    T: Follows the nose, some caramel notes as well, a touch of leafy hops up front. Barrel asserts a little bit more as this warms up, plenty of cherry & dark chocolate. Finishes with Bourbon, cherry, dark chocolate & a little leafy hop

    MF: Super chewy, dialed back carbonation ( slightly firmer on tap ), somewhat warming. Carbonation picks up a little once warm

    Hits all the advertised notes, knocking on the door of greatness, a little more barrel wouldn't have hurt

    I don't remember seeing wahoo here - doesn't mean we dont get it. We have a fish guy we trust - we don't look around much. Which do I prefer - tough call. Have had Tuna right off the boat - blue fin way back in the day and ahi. Literally sushi on the dock or across the street - like buttah. Hard to beat. Wahoo I had once or twice in my travels and it's right there at the top, too. Sword would probably come third in that race, but we know where to find it and it's my wife's favorite.

    Personal preference, the sword fish I've have had was good not great, supposedly fresh. The Tuna & Wahoo were caught by me or someone on the boat I was on. Always makes it better. Grouper & Red Snapper not shabby either

    Just struck me odd with all the music that runs through my head where the internal jukebox lands. Classic, beautiful harmonies, well-crafted music. Maybe I'm trying to tell myself something...

    Fieldwork Gallows & Graves Wee Heavy Scotch Ale

    Look:
    The body is burnt umber with bright orange highlights. An assertive pour raises a finger of dense buff-colored foam, which persists as a collar and a thin disk into the bottom of the glass.

    Smell:
    Luscious sweet caramel accented with a gorgeous touch of smoke. Notes of roasted mixed nuts, dried cherries, fig paste.

    Taste:
    Deep, rich caramel flavors enhanced with smoke, concentrated dried fruits (raisins, prunes), roasted cashews, a drop of molasses, a shred of red apple skin, a hint of cardamom. Sweet but not sugary. There's a touch more smoke on the palate than in the nose (yum!). Alcohol arrives late and stays until the end. Finishes with smoky caramel that begs for the next sip.

    Feel:
    Full-bodied, chewy, and luxuriously creamy. Soft carbonation provides a bit of welcome grit. Alcohol glows like a room full of candles.

    Overall:
    Unapologetically sweet, but not cloying or one-dimensional. Smoky, but never unbalanced. Strong and warming but leaves no burn. A splendid example of a wee heavy, with everything I want on those rare occasions when I seek out the style.

    Welcome to a late night edition of New Beer Sunday #1061. With brother so short and sweet. Had this beer before on Long Beach just south of the OG Beachwood Brewery, but late in night, so didn’t rate.

    6/22/25 - (Draft - The Silver Stamp) (Las Vegas, Nevada) Draft Notes: West Coast IPA, 6.25% ABV. $9 16 oz, looks about 13 oz after head subsides.

    Appearance: Golden blond base, bright white head laves generous soupy lacing and complete creamy cover over the base. Medium sustained carbonation. Very nice. 4.25

    Aroma: Cracker, citrus, pine, hard to gleam as it’s light. 3.5

    Taste: Strong flavor, pine, light grapefruit and citrus backing. Excellent. 4.25

    Mouthfeel: Very dry and bitter in a great way, works well with the pine flavor. Drinks a bit stronger than 6,25%, would peg close to 8%. Pine dry bitters from ago!, to the max. 4.5

    Overall: Was too far gone to rate the first go a few years ago at San Diego. Dry bitters intense, very similar to the PtE experience. Would love to do a side by side to compare. Love this, will definitely track down again later this trip. 4.50

    Blissful Ignorance from Trap Door Brewing

    They call it a hazy and it looks hazy in the glass, with that frosted grayish-yellowish sickly color. And then the aroma is orange. But the mouthfeel is lush with a refreshing watery sensation, and not a hint of acidity. The flavor is citrus 'n' stuff, not too juicy. So whatever raw bits and oat slurry they threw in the kettle, it's a highly drinkable brew. It helps, though, to have a little bite of pretzel between the sips. Overall it's a NEIPA that gives credit to its breed, or else it's the exception that proves the rule. Let's call it a PNW Hazy and here's to ya!
