New Cellarer… is that a word?

    Hello, fairly new to BA and completely new to cellaring. Just started cellaring within the last six months, I have roughly 120 bottles right now. It’s a bit of an experiment for me. Not sure I will like it because I like the intense flavors of hops or the burn of bourbon barrel aged beer so we’ll see how it goes. I have had bottles sit around for a while just because I didn’t get to them for a while, mostly my own brews, but never intentionally aged commercial beers before. I brewed a winter warmer a couple years ago that was pretty good but is absolutely fantastic now, so that’s what made me want to start cellaring.


    Here are the beers I have multiples of for future verticals.

    Goose Island BCBS

    SN Bigfoot

    Oskar Blues Ten Fidy

    Founders KBS

    Founders Imperial Stout

    Brooklyn Black Chocolate Stout

    Stone Old Guardian

    These are beers I have at least one of in the cellar, minus lighter stuff like IPAs which are in the fridge. Some may sit for a while but not necessarily saving for verticals.

    Mainly just joining the ranks of the cellar crowd. Would you say my vertical list are all good candidates for verticles? Anyone want to chime in on results from their own verticles on these?

    Depends on what you want out of them. Anyone can age a beer, and any beer can be aged. From there it depends greatly on what you expect out of them. There is PLENTY of data and feedback on here and all over the web with experiences and results.

    No expectations really. Just planning to enjoy the ride and hoping for a fun experiment. Looking forward to trying a beer 2, 3, 4 years old or older next to fresh.

    I would also suggest getting some DFH Palo Santo Marron and World Wide Stout. I recently has a 5 year old WWS and it was awesome. Gonna be putting more of that one in my cellar for sure.

    Palo Santo Marron is on my to do list. We just started getting Dogfish Head again in TN and I havent seen any WWS yet. May have to wait till next release.

    Ten Fidy is a great one to let sit for about a year.
