New Glarus Wild Sour Ale Dregs

    Just tried this last night, it was fantastic. Looking at putting together a sour brown and I've never really added dregs to a beer. Anyone know if the dregs from this beer would add anything if pitched? It looks like a really clear beer and it seems per a web search that most NG beers are pasturized.

    There is another thread going on here a few weeks ago about cloning NG sours and quite a few people were saying that they believe NG pasteurizes their sours, so bottle dregs would not be effective.

    I'm thinking of doing this with Schell's Star of the North Berliner weiss- different bugs but same idea. I don't think that one is pasturized. I'm planning on pitching the dregs into some starter wort then pitching the whole mess into a 60/40 Pils/Wheat wort and then later pitching an ale yeast of some type to finish. No idea what i am doing....LOL

    I believe I've heard Dan Carey say it is a living product, but that could mean that the souring bugs receive some sort of pasteurization and bottling yeast is added. Or I could have dreamt the whole thing. New Glarus fruit beers are frequently featured in my dreams.

    In any event, I think he must stop the souring some way, because those beers have never been bracingly sour and have a fairly high residual sweetness.

    The best source of sour dregs I've found is anything from Jolly Pumpkin. You can also use commercial Lactobacillus strains, wyeast make some good souring blends as well.
