New Mercer County Brewery

    I could not find an online source for this as it was in a small local newspaper. Troon brewing is coming to the new Brick Farm Tavern just outside of Hopewell borough. The beers will be served on tap at the tavern as well as packaged. The article mentions a focus on farmhouse ales. The Brewer was the head bartender at Jester King. May open this summer.     Mentioned in the same article is A related project called referend beer blendery in Hopewell Township. This guy has a mobile coolship and exclusively does spontaneously fermented ales aged in oak barrels. Here is the link. http://www.thereferend.com/home/.

    These both seems like very ambitious projects and the brewers are both young, in their mid 20s. Interested to see how it works out. The premises where Troon Brewing will be located, Brick Farm Tavern is beautiful, delicious small portioned food, very fancy almost too much so. The brewery will be on the property in a barn. What do we think BA community?

    That's interesting. I have family in Princeton and have been disappointed in the local beer offerings around there. Over the line in PA is a totally different story though... but I hope these pan out great.

    This made my night. I live about 10 minutes from there and am now looking forward to trying their beers.

    Yea Mercer area/central jersey does not have any top of the line breweries. River horse is ok and has been around for a long time but lacks the appeal of Kane, Carton or more recently magnify or spellbound. Conclave brewing in flemington is tiny and limited although I enjoy some of the beers I've tried. Seems we have to always travel a hour.

    With these two projects attempting spontaneous fermentation and a farmhouse heavy brewery, if done right, these could be new NJ beer destinations. With the one Brewer having worked at jester king the comparison to that brewery is obvious. The location makes me think of hill farmstead. These are comparisons that the article elicited for me. We shall see.

    Based on the website post from 7/3/16, Tron could be opening up very soon: August 2016

    Anticipation is building, but have no problem waiting a bit longer as they fine tune their art:

    Troon is going where no other brewery has gone before by making a beer with a lot of hops in it, and it's called Anthropomorphized Reflection of Male Yearning. With a luscious, perfumed body and a bubbly personality it is too beautiful not to admire.

    This is just a test batch to play with the well water at the farm and as such is still in the fermentation process and pictured here flat and at field temp, but it is pretty damn close to where I want it to be/ expect it to be as I scale it up.

    In other news, my Certificate of Occupancy was granted, government licensure has all been obtained, and large-scale brewing is forthcoming in the next week. Woah. Thanks for your patience!​

    So I assume these two are going to be working together? Looks like The Referend does not do any brewing - just blending a la Casey out in CO. This is exciting as fuck.

    Helms (Troon):
    The tavern beers will for the most part be familiar beer styles: India pale ales, stouts and porters, but he will also be featuring a heavy rotation of seasonal offerings as well as oak-aged farmhouse ales and saisons, which he brews with a proprietary mixed culture of yeasts not found in ordinary beer. But his real passion is for experimentation.​

    Priest (Referend):
    Priest plans to use a process very much like Belgium’s méthode lambic, a painstaking sequence that takes as many as four years to complete… Priest knows of only one that makes them all that way — De Garde Brewing in Tillamook, Oregon…Since Priest doesn’t have his own brewing equipment, this part of the process will take place at a nearby brewery that will make the wort to his specifications, under his supervision. The Referend’s coolship, which was custom fabricated by Trenton Sheet Metal, sits in a truck that he will drive from location to location.​

    Read through the entirety if of interest/if you can, as it details the interests in spontaneous fermentation, use of “special pouches” for young Lambic, waiting 2+ years for Priest’s signature product, etc…Troon and Referend will not be working together, but will certainly be passing connoisseurs amongst each other as they “elevate the tastes of beer drinkers throughout the region.”

    I completely forgot about Referend. I'm moving from Lambertville to outside of Ewing and will be about 5 miles from their location. That is really exciting. I can't wait for these guys to finally open.

    So finally got to try Troon brews yesterday at Brick Farm Tavern. They had 4 beers on tap
    1. Purposeful Obfuscation- wheat Pale, 2. Bogomilism -DIPA, 3. Soporific - Passion fruit Saison and 4. Sweating through your corpse paint - English Porter.

    Tried first 3.
    Purpose Obfuscation on the left and bogomilism on right.

    Wheat pale was very clean and crisp with lot citrus. Reminded me of Suarez Family pales. DIPA on the other hand was bit sweet but insanely juicy with tropical fruits. If first batch tastes like this....watch out for TROON.

    Soporific Saison was dry and funky in a very good way....but my palate was wrecked by DIPA by then...

    All in all, we should be excited for these guy/s...another great addition to NY craft scene. Like all great NJ brews....its a trek to get there but truly worth it....

    Very interested to check out Troon. Sweating Through Your Corpse Paint is one the best beer names I've ever seen.

    This is awesome! I grew up in Trenton, but live in Delaware now and I've been waiting for years for a good brewery to open in Mercer Co. My mom lives in Ewing now and is very close to Hopewell. I can't wait to try some of your offerings soon.

    As for the Referend...

    I'm happy to announce that after a year in the making The Referend is opening its doors to the public on Saturday, December 3rd.

    There will be a selection of cask-poured spontaneously fermented beers, including our Berliner Weisse/Lambic-style hybrid, Berliner Messe, as well as dry-hopped and fruited variants. If the timing is right and the barrels are not too temperamental, we will also be pouring Jung, our young Méthode Lambic beer, served still, as is traditional, at cellar temperature.

    I will keep everyone up to date with additional information here, on our website, Facebook, Twitter, and Instagram, but wanted to let you all save the date to come see what we've been up to these many months here in Hopewell Township, NJ.

    This opening date will start our open schedule of the first and third Saturdays of each month, from 2-8 PM. Once a sizable portion of our long-aging barrel stock reaches maturity in 2017 we hope to extend our open days to better accommodate our visitors.

    Being about 7 minutes from Referend isn't going to suck for me!

    I swing by Brick Farm on Saturday between their lunch and dinner hours, which it was empty (mainly because it was the first day doing lunch). I had the Bogomilism and Sweating Through Your Corpse Paint. The Bogo was really good, although for some reason I wasn't getting the juicy punch that I've seen others mention on Untappd and what the bartender described. STYCP was a good roasty porter, a style that got me into craft beer, but I haven't had in a long time. I can't wait to go back and trying the other two that I missed out on as well as the other offerings they'll have in the future.

    Between Troon, Referend and Conclave, the western side of the state is going to be making some major waves in the not too distant future.

    I agree that Troon's beers are solid so far. The double IPA, while not mind blowing just yet, is eminently drinkable for 9.2 abv and I think will attract non-hop heads as well as it is more sweet than bitter.

    I'm not sure if my palate was shot but the saison didn't taste saison-like to me (at least as I've come to know saisons). I got a muted dry aftertaste and a healthy dose of noble hops (I think). Anyone who tryed it get this? It was different but interesting, I'm excited to see where that beer can go.

    Troon is now filling growlers in the brewery. Friday - Sunday from 5-10pm. Bring your own growlers. All available for 64oz fills except for Bogomilism (32oz fills).
