New to aging

    I've never thought of aging beer before until now and would like some tips. I have a CCB humidor series Jai Alai and a Weyerbacher Blasphemy BBA Quad, would these be good beers to begin aging? I know IPA's are best young, but with it being aged in wood, could it benefit from this? What are some other beers and styles that I could start with?

    In general, look for big, bold beers with ABV above 7%. As beer ages, it tends to mellow out a little, so if you start with something mellow, it will fade quickly. If you start with a malty, hoppy barleywine, it will hold up. Typical candidates for aging are barleywines, Russian Imperial Stouts and Belgians. I recommend buying a 4 or 6 pack of something you want to try aging, drink one fresh and then drink one at each successive 6 month point.Some cheap and readily available ones to try are Sierra Nevada Bigfoot, North Coast Old Stock Ale, North Coast Old Rasputin, Bells Expedition Stout.

    Just remember, it is all about what you think tastes good; everyone on here has a different opinion of what should be aged, how long, etc. Have fun, it is addicting.
