I am starting to cellar beer and have a question to storing the beer. I have them vertical and standing up in a wine box. Is this the proper way to cellar beer? I also heard to lay them on their side, is that correct?

Leave them standing that is the correct way.

It's been debated quite a lot over whats better. Most people, myself included, store vertical just because it's easier. Also, storing vertical leaves less surface area of the beer inside exposed to oxygen. Guezues and lambics are often considered the one exception to this as many collectors will store these on their side or slightly angled.

You can store them either way, imho, but when you're close to opening one, if it's in a horizontal position, put it vertical so that if there's any sediment it will settle to the bottom of the bottle. Swing top bottles are an exception for me; when I have them, they go vertical all the way. Again, that works for me. Others' mileage may vary.
