New to Cellaring

    Hey guys, I am in the process of converting my mini fridge (I know it's a small space that I will quickly outgrow, but it's all I got) into an aging cellar. I'm buying an external temperature controller, a hygrometer, and if I need one, a dehumidifier. What are some beers that you'd recommend for aging? Right now I just have a DFH WWS and a Stone W00T Stout 2.0 in there and plan on slowly adding beers.

    Stone's first W00T Stout aged gracefully over the year.

    I prefer to cellar sours, non-hop forward stouts with high abv (11.5+), barleywines, and other unique styles that are high ABV and meant for cellaring. There are some beers that may do well cellaring, but a lot of times its really just a handful of beer styles that are worth cellaring. You live, you learn. But its a pretty terrible feeling drain pouring a beer that was brilliant fresh but turned into a malty mess after a year or two.

    You might want to try DFH 120 minute as well!

    Easier to get beers that I find to age remarkably well (and should be easy to get given your location):

    Founder's Imperial Stout
    Brooklyn Black Chocolate Stout
    DFH 120 Minute
    BCBS
    SN Bigfoot

    I'd definetely recommend at least trying the beer fresh before cellaring it though, otherwise you have nothing to compare it to. Try building some verticals and doing a tasting too - those are always fun and help you see what cellaring does to a beer.
